Tonight's main meal is Chicken breast stuffed with cheese wrapped in prosiutto ham. The original recipe actually calls for parma ham, but we are on a budget here and prosciutto was cheaper. I also use own brand soft cheese instead of Philadelphia.
Ingredients
4 Skinless Chicken Breast Fillets
4 Slices Prosciutto/Parma ham
120g of low fat soft cheese (with herbs)
1 bag mixed leaves
cherry tomatoes
Method
- Preheat the oven to 200 degrees (gas mark 6)
- Split each chicken breast to form a pocket then spoon 30g of soft cheese into each one
- Close the pocket and wrap a slice of ham around the breast
- Place in an ovenproof dish and bake for 25 mins
- For the final 10 mins place the cherry tomatoes in the dish to roast
- Serve with mixed leaves
I also like to serve boiled new potatoes with this dish just to bulk it out a little. For anyone else following the weight watchers propoints plan, each chicken breast is worth 5PP
